CORNMEAL FRITTERS
CORNMEAL FRITTERS
A deep fried delicacy- a Jamaican speciality.
Preparation Time : 5-10 minutes
Cooking Time : 5-10 minutes
Servings : 4
INGREDIENTS
Cornmeal 1/2 cup
Refined flour (maida) 1/2 cup
Margarine 2 tablespoons
Salt to taste
Baking powder 1 teaspoon
Sugar 1 tablespoon
Vanilla essence 2 drops
Milk 1 cup
Egg, beaten 1
Oil to deep fry
METHOD
Mix refined flour and cornmeal in a bowl. Add margarine, salt, baking powder and rub in till the mixture resembles bread crumbs. Add sugar, vanilla essence and milk and mix. Add egg and mix. Heat sufficient oil in a non-stick kadai. Drop spoons full of batter into the hot oil and deep fry until golden and crisp. Drain on absorbent paper. Serve hot.
